There's absolutely nothing better than cosying up on the sofa with a warm tea and a crunchy, chocolatey cookie.
But sometimes, you just can't find the right one. They're either too hard, or they fall apart in your hands - and then there's the issue of finding them in the first place! With this recipe from my grandmother’s recipe book, let the journey to the perfect cookie begin.
Ingredients:
- 100g oats
- 110g ground almonds
- 1 teaspoon baking soda
- 100mg melted coconut oil
- 80g tahini
- 80g maple syrup
- 1 egg
- 2 teaspoons vanilla extract
- 150g dark chocolate of your choice
Method:
- Preheat your over to 200 degrees fan. Line your baking tray with baking paper.
- Mix oats, ground almonds, baking soda, cinnamon, coconut oil, tahini, maple syrup, egg, and vanilla extract together in a mixing bowl. Fold in chopped dark chocolate.
- The dough should now be sticky. Use a tablespoon and scoop the dough to form small balls.
- Place onto the baking tray with some space between each cookie.
- Bake for around 10 minutes until the edges are slightly brown, with the middle not set completely.
- Eat warm or cooled down.
