There's absolutely nothing better than cosying up on the sofa with a warm tea and a crunchy, chocolatey cookie.

But sometimes, you just can't find the right one. They're either too hard, or they fall apart in your hands - and then there's the issue of finding them in the first place! With this recipe from my grandmother’s recipe book, let the journey to the perfect cookie begin.

Ingredients:

 

  • 100g oats
  • 110g ground almonds
  • 1 teaspoon baking soda
  • 100mg melted coconut oil
  • 80g tahini
  • 80g maple syrup
  • 1 egg
  • 2 teaspoons vanilla extract
  • 150g dark chocolate of your choice

 

Method:

 

  1. Preheat your over to 200 degrees fan. Line your baking tray with baking paper.
  2. Mix oats, ground almonds, baking soda, cinnamon, coconut oil, tahini, maple syrup, egg, and vanilla extract together in a mixing bowl. Fold in chopped dark chocolate.
  3. The dough should now be sticky. Use a tablespoon and scoop the dough to form small balls.
  4. Place onto the baking tray with some space between each cookie.
  5. Bake for around 10 minutes until the edges are slightly brown, with the middle not set completely.
  6. Eat warm or cooled down.
